Sorry for the delay, Lyn. Here is your answer: Fresh sweet/mild onions (for that part all onions) can be used immediately after being harvested. There are no specific cons. Shelf life is really the only question = curing helps them store longer; a shorter over all timespan for sweet/mild onions; a longer period for ‘storage’ type onions.
